About Karen Shrum

BS, NTM, ONC

Nutrition Therapist, Oncology Nutrition Consultant

Karen’s nutrition journey began early on. After obtaining her bachelor’s degree from Eastern Michigan University, she moved to Colorado and began taking nutrition classes. A dietician degree was put on hold while focusing on marriage and starting a family. As the youngest in a family of eight Karen became a good observer, and after watching family members battle cancer, hypothyroidism, diabetes, and cardiovascular disease, she set out determined to find a better way. Following the loss of her mother and sister to cancer and through God’s guiding hand, she discovered Nutrition Therapy Institute in Denver and there learned the science behind the healing power of food. After graduating with the school’s Nutrition Therapy Master’s degree, Karen went on to complete Oncology Nutrition Institute's 250-hour certification program and is currently enrolled in Nutrition Genome's Advanced Nutrigenomics training. She has been with Remission Nutrition since 2020, and continues to guide clients through the use of therapeutic nutrition.

In her spare time, Karen finds joy in being a wife and mother, camping, mountain biking, kayaking with whales and travel.
